It's been a long week, I'm not going to lie. When I sat down yesterday to think about what I wanted to create in the Eat Fit Not Fat kitchen, I really couldn't come up with anything fabulous. And the thought of roaming the grocery store for ingredients today was even less attractive. With a little brain storming and the thought of Friday quickly approaching we came up with our version of the "fit margarita". I am a firm believer that everyone deserves to have a cocktail once in a while whether you're on a diet or not. We ditched the super sweet margarita mix that's packed with sugar and calories that you find at your local grocery store and replaced it with fresh ingredients with more flavor and less calories. Trust me, you will not miss your old Marg mix. We paired our Margarita's tonight with spicy blue chips and homemade guacamole.
Your Mixings for 2 Margaritas
4 oz of your favorite tequila, 4 oz of fresh squeezed lime juice, 2 oz of Orange Juice, salt, 2 limes wedges for garnish
If you have a juicer, this step will become immensely easier! If not, do not fret, you can pick up a hand juicer for under 10 dollars at your local grocery store or Target. Or you can hand squeeze limes. We used 9 limes which produced 8 oz of lime juice. Enough for 4 margarita's. Use your palm to roll out each lime before slicing and juicing. This will help soften the lime and I believe it makes it juicier.
Cut 1 slice of lime and rim each glass with the juice of the lime. The lime juice acts as "glue" for your salted rim.
Dip lime coated glasses into salt and fill glass with ice. Place aside.
Shake together 4 oz lime juice, 2 oz orange juice and 4 oz of tequila (makes 2 margaritas). Pour into 2 separate glasses.
Place a lime on each glass for garnish and serve. Enjoy with your favorite southwestern apps. Ole!

GIMME. I can’t believe I missed this last night!
I’m a big proponent of not drinking calories when trying to lose weight. Multiple studies have shown that your body doesn’t recognize liquid calories as quickly as food calories, leading many to over indulge without really thinking about it. With that said, these were delicious and everything is okay in moderation, including moderation.
I’m not gonna lie, my mouth was watering as I read this post. Maybe a post race margarita after the 5k next week?!
