Suz posted this recipe two years ago today, so I thought I would re-feature it because it was absolutely delicious. Enjoy Halloween with delicious, but healthy, donuts!

Fall has definitely arrived in full force here in Boston. The leaves have turned from green into gorgeous hues of orange, yellow and red. The air has gotten colder and the days a little bit shorter. If you ask most New Englanders what one of their favorite fall activities is, you might get a response that includes apple or pumpkin picking,  hay rides, cider drinking or indulging in warm delicious apple cider donuts at a favorite orchard.

For this weeks recipe I made apple cinnamon donuts that are baked and not fried. They are then topped with a sweet cinnamon sugar just like you remember from the orchard.   Just by eliminating the "fried" aspect of the donut it reduces a huge amount of fat and knocks some calories off as well. Mike's 1st bite reaction to these donuts were " This might be your best creation yet!".  The donut pan was 10 bucks, but highly worth it in my opinion as I will definitely be making these again.  Enjoy donuts fresh out of the oven for best results 🙂

Ingredients
  1. 12 oz of unsweetened or natural applesauce
  2. 1 1/2 cups flour
  3. 3/4 cup whole wheat flour
  4. 1/2 cup brown sugar
  5. 1 egg
  6. 1 tbsp canola oil
  7. 2 tsp baking powder
  8. 1/2 tsp baking soda
  9. 1 tsp vanilla
  10. 1/4 cup sugar
  11. 2 tsp of cinnamon, divided
Instructions
  1. Preheat oven to 425 degrees
  2. Combine white sugar with 1 tsp of cinnamon in a small bowl and set aside for later.
  3. In a large bowl mix together brown sugar, applesauce, egg and oil.
  4. Slowly combine white flour, whole wheat flour, 1 tsp cinnamon, vanilla, baking soda and baking powder( remaining ingredients) Be careful to not over mix. I chose to mix by hand vs using the Kitchen Aid stand mixer for this recipe. Mike also suggested mixing all the wet ingredients in one bowl and mixing the wet ingredients in a second bowl and then combing dry to wet without over mixing. Either way is fine I’m sure.
  5. Grease donut pan with non-stick spray. Place approx 2 1/2- 3 tbsp of batter into each donut hole and spread to even out. Place in oven and bake for 8-9 minutes. ( Mine were in the oven for 8 min, oven times may vary)
  6. Remove donuts from oven and set aside to cool for at least 5 minutes before removing from pan. Lightly spray each donut with canola oil. Dip each donut into cinnamon sugar mixture, coating both sides and edges.
  7. Serve warm. Pop in the microwave if enjoying at a later date for 10-15 seconds.
Notes
  1. Each donut has approx 150 calories, 2 grams of fat.

Original recipe apparently makes 22 donuts and each donut has 79 calories. Not sure how she did it! I was able to get 12 donuts out of this recipe.
