Happy 2016 2 Fat Nerds! I know its been a while since I posted a recipe. I could sit here right now and make a New Years resolution to blog more to you all about the delicious food we stuff into our faces here in Somerville, however, I decided I am not going to make any empty promises to you all this year. I do however believe that this year I may have some extra free time on my hands now that I'm officially a Mrs.!!! So you might just get some more tasty recipes as part of your weekly screen time. You can thank me later :).
This weeks recipe was adapted from my all time favorite blogger howsweeteats, she's my food blogger idol and takes absolutely stunning food photos and makes sinfully delicious delights. You should definitely check her blog out.
This weeks recipe will warm your heart and your belly. Perfect for a snowy winters night.
Italian Turkey Sausage, Spinach and Orecchiette Soup
Serves 4
Ingredients:
1lb. Italian turkey sausage (I used spicy, but feel free to use mild or use chicken sausage)
4-5 cups fresh spinach
1 cup orecchiette pasta, whole wheat if you can find it
6 cups low sodium chicken stock
2 tbsp olive oil
1/4 cup freshly grated parmigiano reggiano cheese, plus extra for topping
3-4 garlic cloves, minced
1 yellow onion, diced
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp red pepper flakes
Steps to deliciousness:
- Heat dutch oven or large pot over medium heat with 2 tbsp of olive oil. Saute yellow onion with red pepper, black pepper and salt for approx. 5 minutes till onions become soft.
- Add minced garlic and cook for an additional minute. Pour in chicken stock and bring to a boil.
- While you are waiting for chicken stock to boil. Remove casing from sausage and add to a warm skillet. Cook sausage till brown and crumbly.
- When broth is boiling in your dutch oven add pasta and cook for 8-9 minutes until al dente.
- Toss in spinach and cook for an additional 1-2 minutes. Add 1/4 cup of cheese and stir.
- Add sausage to dutch oven and stir.
- Turn heat off dutch oven (pot) so pasta doesn't get mushy on you.
- Top with additional cheese to your own liking.

I love that dutch oven! I thought dutch ovens were always the cast-iron kind you take camping and that weigh approximately 1,000 pounds. Where did you get yours/what kind is it? We are due for some new pots and pans . . .

Many people also love the brand Le Creuset for dutch ovens, a bit pricier though, but a piece that will last decades. My mom still has her Le Creuset from her wedding 45 years ago 🙂
